  • 8-10 lb bone-in prime rib roast
  • 8 cloves garlic, minced
  • 1/4 cup fresh rosemary, chopped

  • 2 tbsp fresh sage, chopped
  • 1/4 cup olive oil
  • 4 tbsp unsalted butter, softened
  • 2 tbsp Dijon mustard
  • 2 tbsp black peppercorns, crushed
  • 2 tbsp kosher salt
  • 1 tbsp Worcestershire sauce
  • 2 tsp smoked paprika
    Kitchen twine
  • Meat thermometer

Instructions

  1. Remove roast from refrigerator 3 hours before cooking.

  2. Mix herbs, garlic, mustard, and softened butter into paste.

  3. Pat roast dry with paper towels.

  4. Rub with Worcestershire sauce and olive oil.

  5. Season generously with salt and pepper.

  6. Spread herb-butter mixture over entire roast.

  7. Preheat oven to 450°F (230°C).

  8. Place roast bone-side down in roasting pan.

  9. Sear at 450°F for 15 minutes.

  10. Reduce temperature to 325°F (165°C).

  11. Cook until internal temperature reaches 120°F for medium-rare (about 15 minutes per pound).

  12. Rest for 20-30 minutes before carving.
