3 cloves garlic, minced

0.5 cup sour cream
1 piece jalapeño, seeded and chopped
2 tablespoons lime juice
1 tablespoon olive oil
Directions
- Heat vegetable oil in a large pan over medium-high heat; sear chicken thighs until golden, about 4 minutes per side.
- Remove chicken from the pan and set aside. In the same pan, add onion and garlic; sauté until fragrant and translucent.
- Stir in cumin, salt, rice, and chicken broth. Bring to a boil. Return chicken to the pan, cover, and reduce heat to low.
- Cook for 20-25 minutes, or until the chicken is cooked through and the rice is tender and fluffy. Remove from heat.
- In a blender, combine cilantro, jalapeño, lime juice, olive oil, and sour cream; blend until smooth and creamy.
