    Ingredients

    • 1 pound italian sausage

    • 1 onion, chopped

    • 2 cloves garlic, minced

    • 4 cups chicken broth

    • 2 cups heavy cream

    • 1 teaspoon dried thyme

    • 2 cups baby spinach

    • 0.5 teaspoon salt

    • 0.25 teaspoon black pepper

    • 0.5 cup parmesan cheese, grated

    Directions

    • In a large pot over medium heat, cook the sausage until it is browned and cooked through. Remove and set aside.
    • In the same pot, add the onion and garlic, sautéing until the onion is translucent and the garlic is fragrant.
    • Pour in the chicken broth, stirring well to deglaze the pot and incorporate the flavors.
    • Add the cooked sausage back into the pot along with the heavy cream and dried thyme, stirring to combine.
    • Allow the soup to simmer on low heat for 15 minutes, letting the flavors meld and the liquid slightly thicken.
    • Add in the baby spinach, salt, and black pepper, cooking until the spinach is wilted and tender.
