Creamy Sausage Soup is a rich, comforting blend of Italian sausage, baby spinach, and parmesan in a velvety, flavorful broth.

1 pound italian sausage
1 onion, chopped
2 cloves garlic, minced
4 cups chicken broth
2 cups heavy cream
1 teaspoon dried thyme
2 cups baby spinach
0.5 teaspoon salt
0.25 teaspoon black pepper
0.5 cup parmesan cheese, grated
Directions
- In a large pot over medium heat, cook the sausage until it is browned and cooked through. Remove and set aside.
- In the same pot, add the onion and garlic, sautéing until the onion is translucent and the garlic is fragrant.
- Pour in the chicken broth, stirring well to deglaze the pot and incorporate the flavors.
- Add the cooked sausage back into the pot along with the heavy cream and dried thyme, stirring to combine.
- Allow the soup to simmer on low heat for 15 minutes, letting the flavors meld and the liquid slightly thicken.
- Add in the baby spinach, salt, and black pepper, cooking until the spinach is wilted and tender.
