2 ripe mangoes, pureed
1 cup coconut milk
2 tablespoons curry powder

1 teaspoon chili powder
1 teaspoon salt
1 lime, juiced
2 tablespoons fresh cilantro, chopped
Directions
- Heat the vegetable oil in a large pan over medium heat, then add the chopped onion. Cook until the onion becomes translucent, stirring frequently.

- Stir in the curry powder, turmeric powder, and chili powder, allowing the spices to cook and release their aroma for about a minute.
- Add the chicken pieces to the pan, ensuring they are well-coated with the spice mixture. Cook for approximately 5 minutes, stirring occasionally.
- Pour the mango puree over the chicken, mixing well to combine all ingredients thoroughly.
- Add the coconut milk to the pan, ensuring the chicken is submerged in the liquid. Bring to a simmer over medium heat.
- Cover the pan and let the curry cook for approximately 25 minutes, stirring occasionally, until the chicken is fully cooked.
- Season the curry with salt and lime juice, stirring to distribute the flavors evenly throughout the dish.
