Ingredients

 

  • 2 (10 oz) bags fresh spinach
  • 2 (14 oz) cans artichoke hearts, drained
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 4 oz cream cheese, softened
  • 1/2 cup Parmesan cheese, grated
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 1 lemon, juiced
  • 1 tsp red pepper flakes
  • 1/2 tsp nutmeg
  • Salt and black pepper to taste
  • Fresh dill for garnish
  • Croutons for serving

Instructions

  1. Heat olive oil and butter in large pot over medium heat.

  2. Sauté onion until translucent, about 5 minutes.

  3. Add garlic and red pepper flakes, cook 1 minute.

  4. Roughly chop artichoke hearts, add to pot.

  5. Add spinach in batches, stirring until wilted.

  6. Pour in vegetable broth, bring to simmer.

  7. Stir in cream cheese until melted.

  8. Add heavy cream and Parmesan.

  9. Simmer 15 minutes until slightly thickened.

  10. Blend until smooth (or leave chunky if preferred).

  11. Season with lemon juice, nutmeg, salt, and pepper.

  12. Garnish with dill and serve with croutons.
