Skillet Nachos with Guacamole

These Skillet Nachos are a crowd-pleasing snack with a twist! Opt for whole-grain chips, and the combination of veggies, black beans, and guacamole adds a nutritious touch to this cheesy indulgence.

Ingredients

 

  • 1 bag whole-grain tortilla chips
  • 1 cup black beans, cooked and drained
  • 1 cup cherry tomatoes, halved
  • 1 cup bell peppers (any color), diced
  • 1 jalapeño, thinly sliced (optional for heat)
  • 2 cups shredded cheddar cheese
  • 1/2 cup black olives, sliced
  • 1/4 cup fresh cilantro, chopped
  • Sour cream for serving (optional)

 

For Guacamole:

  • 2 ripe avocados, mashed
  • 1/4 cup red onion, finely chopped
  • 1/4 cup tomato, diced
  • 1 clove garlic, minced
  • 1 tablespoon lime juice
  • Salt and black pepper to taste
  •  

Instructions

 

  1. Preheat your oven to 400°F (200°C).

  2. Arrange whole-grain tortilla chips in a single layer on a large oven-safe skillet or baking sheet.

  3. Sprinkle cooked black beans, halved cherry tomatoes, diced bell peppers, and sliced jalapeño over the tortilla chips.

  4. Top with shredded cheddar cheese and sliced black olives.

  5. Bake in the preheated oven for 10-15 minutes or until the cheese is melted and bubbly.

  6. While the nachos are baking, prepare the guacamole.

 

For Guacamole:

  1. In a bowl, combine mashed avocados, finely chopped red onion, diced tomato, minced garlic, lime juice, salt, and black pepper.

  2. Mix until well combined.

  3. Adjust the seasoning to your liking.

 

To Assemble:

  1. Remove the skillet from the oven.

  2. Drizzle guacamole over the hot skillet nachos.

  3. Sprinkle fresh cilantro on top.

  4. Serve immediately with optional sour cream on the side.
