Sausage and Apple Stuffed Pork Roast

  • 3 lb pork loin roast, butterflied
  • 1 lb Italian sausage, casings removed
  • 2 Honeycrisp apples, diced
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 2 cups fresh spinach
  • 1 cup breadcrumbs
  • 2 tbsp fresh sage, chopped
  • 2 tbsp fresh rosemary, chopped
  • 2 tbsp olive oil
  • 2 tbsp Dijon mustard
  • 1 tbsp apple cider vinegar
  • Kitchen twine
  • Salt and black pepper to taste
  • 1 tsp paprika
  • 1/2 tsp fennel seeds
  • 1/4 cup apple cider
  • Fresh herbs for garnish

 

Instructions

  1. Preheat oven to 375°F (190°C).

  2. Cook sausage in skillet, breaking into crumbles.

  3. Add onion, garlic, and apples; cook until softened.

  4. Stir in spinach until wilted.

  5. Mix in breadcrumbs, sage, and rosemary. Cool slightly.

  6. Butterfly pork loin and pound to even thickness.

  7. Spread mustard over inside of pork.

  8. Layer stuffing mixture evenly.

  9. Roll tightly, secure with kitchen twine.

  10. Rub outside with oil, paprika, salt, and pepper.

  11. Roast 60-75 minutes until internal temperature reaches 145°F.

  12. Rest 15 minutes before slicing.
