Fiery Roasted Red Pepper Hummus

The olive oil in this recipe provides heart-healthy monounsaturated fats, while the garlic and spices offer antioxidant properties. Ingredients

 

  • 2 (15 oz) cans chickpeas, drained and rinsed
  • 1/3 cup tahini
  • 1/4 cup fresh lemon juice
  • 3 cloves garlic, minced
  • 1 roasted red pepper, chopped
  • 2 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp cayenne pepper (adjust to taste)
  • Salt to taste
  • Water as needed for consistency

 

For garnish:

  • Drizzle of olive oil
  • Sprinkle of smoked paprika
  • Chopped fresh parsley

Instructions

  1. In a food processor, blend chickpeas and tahini until smooth.

  2. Add lemon juice, garlic, roasted red pepper, olive oil, cumin, smoked paprika, and cayenne.

  3. Process until well combined.

  4. If the hummus is too thick, add water one tablespoon at a time until desired consistency is reached.

  5. Taste and adjust seasoning as needed.

  6. Transfer to a serving bowl, create swirls on top with the back of a spoon.

  7. Garnish with a drizzle of olive oil, a sprinkle of smoked paprika, and chopped parsley.

  8. Serve with pita chips, vegetable sticks, or warm flatbread.
