- 2 cups plain Greek yogurt
- Zest of 2 lemons
- 3 tbsp fresh lemon juice
- 2 tbsp honey (adjust to taste)
- 1 tsp vanilla extract
- 1/4 cup granola
- 1/4 cup fresh blueberries
- 2 tbsp sliced almonds
For the lemon curd (optional):
- 2 egg yolks
- 1/4 cup fresh lemon juice
- 1/4 cup sugar
- 2 tbsp unsalted butter
- Pinch of salt
Instructions

In a bowl, mix Greek yogurt, lemon zest, lemon juice, honey, and vanilla extract until well combined.

If making lemon curd: In a heatproof bowl, whisk egg yolks, lemon juice, and sugar. Place over a pot of simmering water (double boiler) and cook, stirring constantly, until thickened. Remove from heat, stir in butter and salt. Let cool.

In serving glasses or bowls, layer the lemon yogurt mixture.

If using, add a layer of lemon curd.

Top with granola, fresh blueberries, and sliced almonds.

Repeat layers if desired.
Garnish with additional lemon zest if you like. -
