Pizza Stuffed Zucchini Boats

Pizza Stuffed Zucchini Boats offer a creative and lighter twist on traditional pizza. Packed with veggies and using zucchini as the base, this recipe provides a delicious way to enjoy the flavors of pizza while incorporating additional nutrients.

Ingredients

 

  • 4 large zucchini, halved lengthwise
  • 1 cup pizza sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup black olives, sliced
  • 1/4 cup green bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh basil, chopped
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • Salt and black pepper to taste
  • Olive oil for drizzling

Instructions

 

  1. Preheat the oven to 400°F (200°C).

  2. Using a spoon, hollow out the center of each zucchini half, creating a “boat” shape. Save the scooped-out zucchini for another use.

  3. Place the zucchini boats on a baking sheet lined with parchment paper.

  4. Spread pizza sauce evenly inside each zucchini boat.

  5. Sprinkle shredded mozzarella cheese over the pizza sauce.

  6. Top each boat with cherry tomatoes, black olives, green bell pepper, red onion, and fresh basil.

  7. Sprinkle dried oregano and crushed red pepper flakes (if using) over the top.

  8. Season with salt and black pepper to taste.

  9. Drizzle a bit of olive oil over each zucchini boat.

  10. Bake in the preheated oven for 15-20 minutes or until the zucchini is tender and the cheese is melted and bubbly.

  11. Remove from the oven and let them cool for a few minutes.
