Chicken Quesadillas with Avocado Salsa

Chicken Quesadillas with Avocado Salsa are a satisfying and protein-packed meal that combines the goodness of lean chicken, melted cheese, and a refreshing avocado salsa. This recipe offers a balance of flavors and nutrients, making it a delicious and wholesome choice for a quick and easy dinner.

Ingredients

 

For the Chicken Quesadillas:

  • 2 cups cooked chicken breast, shredded
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup diced red bell pepper
  • 1/4 cup chopped fresh cilantro
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste
  • 4 large flour tortillas
  • Cooking spray or olive oil for cooking

 

 

For the Avocado Salsa:

  • 2 ripe avocados, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • Salt and black pepper to taste

Instructions

 

For the Chicken Quesadillas:

  1. In a bowl, combine shredded chicken, cheddar cheese, Monterey Jack cheese, diced red bell pepper, chopped cilantro, ground cumin, chili powder, garlic powder, salt, and black pepper. Mix well.

  2. Lay out the flour tortillas and divide the chicken mixture evenly among them, spreading it on one half of each tortilla.

  3. Fold the tortillas in half to form quesadillas.

  4. Heat a large skillet or griddle over medium heat. Lightly coat with cooking spray or olive oil.

  5. Place the quesadillas in the skillet and cook for 2-3 minutes per side or until the cheese is melted, and the tortillas are golden brown.

  6. Remove from the skillet and let them rest for a minute before slicing.

 

For the Avocado Salsa:

  1. In a bowl, combine diced avocados, halved cherry tomatoes, chopped red onion, chopped cilantro, lime juice, salt, and black pepper. Gently toss to combine.

  2. Adjust seasoning to taste.

 

To Serve:

  1. Slice the Chicken Quesadillas into wedges.
  2. Serve with a generous scoop of Avocado Salsa on top or on the side.
