2 cups leeks, thinly sliced
8 ounces mushrooms, sliced
250 grams pasta
1 cup Gruyere cheese, shredded
2 tablespoons butter
1 clove garlic, minced
1 teaspoon salt
1 teaspoon black pepper
1 tablespoon lemon juice
Directions
- Heat 2 tablespoons of olive oil in a large pan over medium heat. Add the leeks and cook until they are soft and caramelized, about 8-10 minutes.
- In another large pan, heat the remaining olive oil and sauté the mushrooms for 5-7 minutes until golden brown and tender.
- Bring a pot of salted water to a boil. Add pasta and cook according to the package instructions until al dente. Reserve 1/2 cup of pasta water and drain the rest.
- Add the butter and garlic to the pan with leeks. Stir for about 1 minute until the garlic becomes fragrant. Then add the mushrooms and mix well.
- Reduce the heat to low, add the drained pasta to the pan with leeks and mushrooms. Stir in Gruyere cheese along with the reserved pasta water until the cheese melts and creates a creamy sauce.
- Season the pasta with salt, black pepper, and lemon juice. Toss everything together to ensure the pasta is evenly coated with the sauce.
- Serve hot, garnishing with extra Gruyere cheese if desired.
