Ingredients

 

  • 24 baby potatoes (red or gold)
  • 8 slices bacon, crumbled
  • 1 1/2 cups sharp cheddar cheese, shredded
  • 1/4 cup sour cream
  • 3 green onions, finely chopped
  • 2 tbsp butter, melted
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • Salt and black pepper to taste

 

For garnish:

  • Extra sour cream
  • Reserved bacon crumbles
  • Chopped green onions
  • Chives
  • Red pepper flakes (optional)
  • For dipping:
  • Ranch dressing
  • Chipotle aioli
  • Sour cream

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Wash potatoes and pat dry.
  3. Toss potatoes with olive oil, salt, and pepper.
  4. Bake for 25-30 minutes until tender.
  5. Let cool slightly, then halve each potato.
  6. Scoop out centers leaving a small rim of potato.
  7. Mix melted butter with garlic powder and paprika.
  8. Brush potato skins with seasoned butter.
  9. Return to oven for 10 minutes until crispy.
  10. Fill each skin with cheese and bacon.
  11. Bake 5 minutes more until cheese melts.
  12. Top with sour cream, green onions, and extra bacon.
