Patriotic Red, White, and Blue Popsicles

Healthy Fact of the Day

These popsicles are a healthier alternative to store-bought varieties. They're made with fresh fruit and yogurt, providing vitamins, antioxidants, and probiotics. The natural sweetness comes primarily from the fruit, with just a touch of added honey.

Ingredients

 

  • 1 cup fresh strawberries, hulled
  • 1 cup fresh blueberries
  • 1 cup vanilla yogurt
  • 2 tbsp honey, divided
  • 1/4 cup water

Instructions

  1. For the red layer: Blend strawberries with 1 tbsp honey until smooth. Set aside.

  2. For the blue layer: Blend blueberries with 1 tbsp honey and water until smooth. Set aside.

  3. For the white layer: Stir vanilla yogurt until creamy.

  4. To assemble:

    • Pour the strawberry puree into popsicle molds, filling about 1/3 of each mold.

    • Freeze for about 30 minutes until slightly firm.

    • Add a layer of vanilla yogurt, filling another 1/3 of each mold.

    • Freeze for another 30 minutes.

    • Top with the blueberry puree, filling to the top of the molds.

    • Insert popsicle sticks and freeze for at least 4 hours or overnight.

    • To serve, run the molds briefly under warm water to release the popsicles.
