Aromatic Mushroom Curry

Mushrooms are neither plants nor animals. They belong to their own kingdom called Fungi and are more closely related to animals than plants!

Ingredients

 

  • 1 lb mixed mushrooms (button, cremini, shiitake), sliced
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 2 tbsp vegetable oil
  • 1 can (14 oz) coconut milk
  • 2 tbsp tomato paste
  • 1 cup vegetable broth
  • 2 tbsp curry powder
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1/2 tsp red chili flakes (adjust to taste)
  • Salt to taste
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime

 

Instructions

  1. Heat oil in a large skillet over medium heat. Add onions and sauté until translucent.

  2. Add garlic and ginger, cook for another minute until fragrant.

  3. Stir in curry powder, turmeric, cumin, and chili flakes. Cook for 30 seconds to bloom the spices.

  4. Add mushrooms and cook until they release their moisture and start to brown, about 5-7 minutes.

  5. Stir in tomato paste and cook for another minute.

  6. Pour in coconut milk and vegetable broth. Simmer for 15-20 minutes until sauce thickens.

  7. Season with salt to taste.
    Stir in fresh cilantro and lime juice just before serving.

  8. Serve hot with basmati rice or naan bread.
