1 cup milk
1/4 cup unsalted butter, melted
2 tablespoons honey
1 large egg

2 tablespoons butter, melted
Directions
- Preheat your oven to 400°F (200°C) and lightly grease a mini muffin pan with cooking spray or oil.
- In a large mixing bowl, combine cornmeal, flour, sugar, baking powder, and salt using a whisk or fork to blend evenly.
- In a separate bowl, whisk together milk, melted butter, honey, and egg until well combined and smooth.
- Pour the wet ingredients into the dry ingredients and stir gently using a spatula or wooden spoon until just combined.
