    Ingredients

    • 1 cup yellow cornmeal

    • 1/2 cup all-purpose flour

    • 1/4 cup granulated sugar

    • 1 tablespoon baking powder

    • 1/2 teaspoon salt

    • 1 cup milk

    • 1/4 cup unsalted butter, melted

    • 2 tablespoons honey

    • 1 large egg

    • 2 tablespoons honey

    • 2 tablespoons butter, melted

    Directions

    • Preheat your oven to 400°F (200°C) and lightly grease a mini muffin pan with cooking spray or oil.
    • In a large mixing bowl, combine cornmeal, flour, sugar, baking powder, and salt using a whisk or fork to blend evenly.
    • In a separate bowl, whisk together milk, melted butter, honey, and egg until well combined and smooth.
    • Pour the wet ingredients into the dry ingredients and stir gently using a spatula or wooden spoon until just combined.
    • Spoon the batter into the prepared mini muffin pan, filling each cup almost to the top.
    • Bake in the preheated oven for 10-12 minutes or until the tops are golden brown and a toothpick comes out clean.
    • While the cornbread poppers are baking, prepare the glaze by mixing 2 tablespoons of honey with 2 tablespoons of melted butter.
    • Remove the poppers from the oven and immediately brush them with the prepared honey butter glaze for a shiny finish.
