Honey Butter Cornbread Poppers

Healthy Fact of the Day

Use whole grain cornmeal for added fiber, and try reducing the sugar slightly or using maple syrup as a natural sweetener alternative. Bake in silicone molds for less added fat.

These Honey Butter Cornbread Poppers are bite-sized bundles of comfort that combine the tender, slightly sweet texture of cornbread with a glossy honey-butter glaze that makes them irresistible. Baked until golden and brushed with warm honey butter straight from the oven, these mini muffins are perfect for parties, family dinners, or whenever you need a crowd-pleasing side that disappears as fast as you can make them.

    Ingredients

    • 1 cup yellow cornmeal

    • 1/2 cup all-purpose flour

    • 1/4 cup granulated sugar

    • 1 tablespoon baking powder

    • 1/2 teaspoon salt

    • 1 cup milk

    • 1/4 cup unsalted butter, melted

    • 2 tablespoons honey

    • 1 large egg

    • 2 tablespoons honey

    • 2 tablespoons butter, melted

    Directions

    • Preheat your oven to 400°F (200°C) and lightly grease a mini muffin pan with cooking spray or oil.
    • In a large mixing bowl, combine cornmeal, flour, sugar, baking powder, and salt using a whisk or fork to blend evenly.
    • In a separate bowl, whisk together milk, melted butter, honey, and egg until well combined and smooth.
    • Pour the wet ingredients into the dry ingredients and stir gently using a spatula or wooden spoon until just combined.
    • Spoon the batter into the prepared mini muffin pan, filling each cup almost to the top.
    • Bake in the preheated oven for 10-12 minutes or until the tops are golden brown and a toothpick comes out clean.
    • While the cornbread poppers are baking, prepare the glaze by mixing 2 tablespoons of honey with 2 tablespoons of melted butter.
    • Remove the poppers from the oven and immediately brush them with the prepared honey butter glaze for a shiny finish.
    • Allow the poppers to cool in the pan for a few minutes, then transfer them to a wire rack to cool completely.

    Tip of the Day

“Always let your meat rest before slicing.”

Whether you're roasting a chicken, grilling steak, or baking pork tenderloin, letting cooked meat rest for 5–10 minutes before slicing allows the juices to redistribute evenly. This simple step keeps your meat juicy and tender, ensuring every bite is flavorful and moist. Bonus: It gives you a moment to plate your sides or garnish for a perfect presentation!
