1 cup polenta
4 cups water
1 cup milk
2 tablespoons butter
2 tablespoons olive oil
200 grams mushrooms
1 clove garlic
1 teaspoon salt
0.5 teaspoon black pepper
0.25 cup Parmesan cheese
1 tablespoon fresh parsley
Directions
- Bring 4 cups of water to a boil in a large saucepan. Once boiling, reduce heat to low and gradually whisk in the polenta.
- Continue to stir the polenta frequently, ensuring it does not stick to the pan, for about 30 minutes or until it’s thick and creamy.
- While the polenta is cooking, clean and slice the mushrooms. Finely chop the garlic for the mushroom mixture.
- In a skillet over medium heat, heat the olive oil and butter until melted. Add the garlic and sauté for about 1 minute.
- Add the sliced mushrooms to the skillet and cook for about 8-10 minutes, or until they are golden and tender.
- Season the mushrooms with salt and black pepper, then stir in freshly chopped parsley before removing from heat.
- Once the polenta is ready, stir in milk and Parmesan cheese until fully incorporated and creamy.
- Serve the creamy polenta on plates, topped generously with the sautéed mushrooms. Garnish with additional Parmesan and parsley if desired.
