  • 1 cup beef broth
  • 1 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste
  • 4 cups mashed potatoes (about 4-5 large potatoes)
  • 1/4 cup milk
  • 2 tbsp butter
  • 1/2 cup grated cheddar cheese
  • 1 tbsp olive oil

Instructions

  1. Preheat oven to 400°F (200°C).

  2. In a large oven-safe skillet, heat olive oil over medium heat. Add onion, carrots, and celery. Cook until softened, about 5 minutes.

  3. Add garlic and cook for another minute.

  4. Add ground lamb (or beef) and cook until browned, breaking it up as it cooks.

  5. Stir in tomato paste, thyme, and rosemary.

  6. Cook for 1 minute.

  7. Pour in beef broth and simmer for 5 minutes until slightly reduced.

  8. Add frozen peas and season with salt and pepper. Remove from heat.

  9. In a separate bowl, mix mashed potatoes with milk and butter until smooth.

  10. Spread the mashed potatoes over the meat mixture in the skillet, creating peaks with a fork.

  11. Sprinkle grated cheese over the top.

  12. Bake in the preheated oven for 20-25 minutes, until the cheese is melted and the potatoes are golden.

  13. Let cool for 5 minutes before serving.
