  • Assorted vegetables (e.g., bell peppers, zucchini, eggplant, asparagus, onions)
  • Olive oil
  • Salt and pepper
  • Optional seasonings (garlic powder, herbs, or your favorite spices)



  1. Preheat the Grill: Preheat your grill to medium-high heat (around 350°F to 400°F or 175°C to 200°C).
  2. Prepare the Vegetables: Wash, peel (if needed), and cut the vegetables into even-sized pieces. This helps ensure they cook evenly.
  3. Oil and Season: Brush the vegetables lightly with olive oil to prevent sticking and enhance flavor. Season with a pinch of salt, black pepper, and any additional seasonings you prefer.
  4. Use Skewers or a Grill Basket: To prevent smaller pieces from falling through the grill grates, consider using skewers or a grill basket. If you’re using skewers, soak them in water for about 30 minutes before threading the vegetables to prevent them from burning.
  5. Grill with Care: Place the vegetables on the preheated grill. Grill time varies depending on the type and size of the vegetables, but as a general guideline:
    • Bell peppers: 3-4 minutes per side until slightly charred and softened.
    • Zucchini and eggplant: 2-3 minutes per side until grill marks appear and they’re tender.
    • Asparagus and onions: 2-3 minutes per side until they have grill marks and are slightly tender.
    • Thicker vegetables may take a bit longer. Adjust the time accordingly.
  6. Don’t Overcook: Be attentive and avoid overcooking the vegetables; they should still have a slight crunch and vibrant colors.
  7. Serve Promptly: Remove the grilled vegetables from the heat and serve them promptly. You can garnish them with fresh herbs or a drizzle of balsamic vinegar or lemon juice for added flavor.
