Ingredients

 

  • 1 lb boneless, skinless chicken breasts
  • 1 can (14 oz) diced tomatoes, undrained
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup frozen corn kernels
  • 1 packet taco seasoning
  • Optional toppings: avocado slices, shredded cheese, tortilla strips, cilantro, lime wedges

Instructions

 

  1. In a large pot, combine diced tomatoes, black beans, frozen corn, and taco seasoning.

  2. Add the boneless, skinless chicken breasts to the pot.

  3. Bring the mixture to a boil, then reduce the heat to simmer.

  4. Cover and simmer for 20-25 minutes or until the chicken is cooked through.

  5. Remove the chicken breasts from the pot and shred them using two forks.

  6. Return the shredded chicken to the pot and stir to combine.

  7. Serve the 5-Ingredient Chicken Tortilla Soup hot.

  8. Garnish with your choice of toppings such as avocado slices, shredded cheese, tortilla strips, cilantro, and lime wedges.
